trying to cut up a garlic clove can be challenging. I sort of have big hands and it seems sometimes more ends up on the counter top than gets into where I want to put it. Maybe there's a special tool and I don't mean one of those garlic crushers because they don't cut a clove into little chunks.

I just buy the jar or the squeeze tube. I can never get the garlic smell off my hands when I have to chop it.

The stuff in the jar or tube doesn't compare to fresh garlic.

I just chopped some garlic a little earlier ... using the side of your knife, press the garlic firmly into the board, basically flattening it. It will naturally break lengthwise. Then dice width wise. If you still have big pieces, use your knife in a rocking motion (keep the point on the board and bring the handle up and down).

If you have a stainless sink, the easiest way to get the smell off your hands is to rub your hands on the sink. Seriously, it works!

I have a stainless steel bar, about the size of a hotel-size bar of soap, that is supposed to neutralize onion and garlic scents from hands by handling it after chopping either. I've found the effects to be not that notable, myself.

Search Alazon for an "Ulu Knife". Get the one with the cutting board which has a round indentation which matches the knife. I got mine from my parents when they returned from an Alaska trip.

These knives are wonderful for chopping herbs, onions, garlic, etc. The curved bowl keeps the chopped bits from flying away. Just watch where you put the fingers of the hand which isn't holding the knife....

Are you familiar with the garlic press? It's a kitchen tool that does this, a hand-tool. Couldn't be easier.
