I don't care much for beef unless it's raw or cooked very rare. I'd probably feel the same about horse meat.

It would not be 'economically viable' to use horse meat in the USA because there's a cultural perception that horse meat should not be used for consumption because horses are 'intelligent' ... if there's no profit in it nobody is going to do it except in niche areas for premium prices.
