I cannot make these to save my life. I don't understand why, lol.

Just read about the crockpot. That sounds really perfect. What kind of onions do you use?

I've done them in the crock pot too, my recipe calls for half butter and half EVOO. And I think I just used yellow onions.

Here's an unlikely, but totally delicious, tip for caramelizing onions...for every 2 - 3 sliced onions add a small amount of star anise. One of those hard, pod-like pieces which form the "star" is sufficient. Put it in the pan at the beginning right along with the onions.

This really does make the onions even more, well, uh, oniony. YUM.
