Quesadillas, I usually cut into wedges or quarters, pick up, and eat. Sometimes dip in salsa or sour cream. I don't pick it up without first cutting it into easily handled pieces.

I don't usually eat burritos, but when I do, I pick them up and eat them.
I do eat burritos. Most are easily handled but there have been the occasional that were super stuffed. It would be so diifficult to pick them up by hand, as they often fall apart. I would try to do with them the same as if I was doing for the quesadillas.
I usually eat a quesadilla by adding Pico De Gallo and guacamole and then cutting into quarters. I consume it with my hands. I eat burritos by unwrapping the foil, adding salsa and eating with my hands.
The ones I make at home can easily be picked up with the hands. Sometimes I just use cheese, sometimes I add lightly mashed black beans and/or salsa. Green salsa is particularly good in quesadillas.
Restaurant quesadillas can be pretty messy if they are stuffed with all kinds of things. In that case, I'll use a fork. But if they're neat enough, I'd rather pick them up.
Great question that I missed the first time around. I eat quesadilla like pizza and fold it, if it is stuffed.

I understand eating them puny Mission burritos by hand, but come on down to LA for a Manuel's Special at El Tepeyac.
Cut into wedges, topped with pico, guac, pickled red onions, cilantro and crema. Pick up and eaten. Use a fork to clean up droppsies.
