Oh yes, yes.
I always roll my own sushi. And Korean type of sushi with beef instead of fish called Gim-Bap.

The trick to keeping the rice from becoming messy is to have a bowl of water to dip the fingers and knife.

A cheater way to make sushi is to not roll everything. Cut the seaweed into quarters. Make a cone and stuff.

If you insist on rolling, use a rubber food scraper to take the rice and mash it into the seaweed neatly.

I learned these tricks from old Japanese grandmothers.
