I had never heard of putting in the microwave I'm going to try that and see if it is easier thanks ladies .

works great and this is the time of the year we eat a lot of fall/winter squash. I love to visit the farmers markets, they have so many choices. Too bad they will be gone in just about a month. We can count on Sat markets until about the last week on Oct.

Sure, I do it all the time. Pierce it a few times, and put it on a paper towel. Cook about 4 minutes and let rest. Cut in half and scrape out the seeds. It may, or may not be completely done, so at this point I usually place some butter, brown sugar and raisins in the cavity and finish it in the oven.
I peel butternut, because I like to cook it on the stove, like mashed potatoes, but all the other ones, I do in the microwave.

Just drain, mash with a bit of salt, butter and brown sugar, phonelady, and simmer off any excess water.

I always cook spaghetti squash in the microwave for 20 minutes. comes out great every time. I do acorn squash in the microwave too. I mostly roast acorn and butternut but sometimes I want more of a puree.

We have a concoction I came up with. Spaghetti squash (par cooked and fluffed into a backing dish).
Italian or other sausage (loose) broken up and browned in a pan.
Red and green bell peppers, white onion par sauteed (jalapeno optional).
Pine nuts, toasted in a dry pan.

Dump the sausage, peppers, onions, and pine nuts onto the bed of SS, sprinkle with a bit of grated cheese (Parm/Romana) and paprika and pop in the oven. Bake at around 335 for about 25 minutes or until its hot.

Enjoy! (also makes for great leftovers).
