I had a bison burger while vacationing at Rocky Mountain National Park. As said above, not much different than beef.

I've heard of people using milk to soak venison in, that is supposed to remove some of that flavor.
They aren't drastically different. Leaner, as some have said, but frankly not much different than grass fed beef.

Buffalo and Cattle are VERY similar. They are so close genetically that they can interbreed and create fertile offspring.

Back in the mid 70s my family owned some land we would vacation at right outside grand Teton park. If you head east from there, you came to the wind River range of area and there was a restaurant that was growing its own bison out in the rangeland. This was just starting to take off. The bison seals were tremendous!!!

I have had bison others places, but not as flavorful as back in wyoming.

I had bison more than a few times when I lived in CO. Whether as burger, steak, or prime rib, it tasted similar to grassfed beef, not gamey.
