DH and I spent the day with errands and eye doctor appointments with freezing weather. We decided to stop at our local diner for dinner and it was great.

I had an open-face turkey sandwich, mashed potatoes with gravy, salad, and cole slaw. DH had a cup of chicken noodle soup, open-face meatloaf sandwich, mashed potatoes with gravy, and corn.

Two huge burgers for Darcy and Happy.

It was my supreme, very favorite comfort-food dinner.

Does that mean you only glaze half the meatloaf?

My adult sons and their wives/fiancee and a few little grandkids and 2 wonderful dogs have come to my house for a 3 day visit. Nothing makes me happier than to have this incredible, fun, handsome, smart group here with me. We all love to cook, so we divide meals into cooking teams...and we have great fun deciding on who will be on what team.

Tonight, my oldest son and I made dinner for everyone. We had an hors douvre set up with several kinds of cheeses and crackers, olives of many types, some marinated mushrooms and a lovely bunch of prosciutto. We then threaded shrimp and crushed garlic cloves onto skewers and marinated them in vermouth, lemon and olive oil.

Next, we set up a steak marinade for the strip steaks. We like to marinate in some Dijon, garlic, fresh lemon juice mixed with soy sauce and olive oil. 30 minutes later, we throw the steaks on the grill and let them cook on high heat until seared on the outside and medium rare on the inside. Cover them up with a piece of foil. Then we throw the shrimp kabobs onto the still hot flame and cook til pink and slightly charred.

All of this is served with a Caesar salad, red wine or beer for the adults, and lemon aid for the kids. It is a lovely evening of great food and lots of laughs. Tomorrow, Uncle John and the little kids are going to do breakfast. I hear they plan to make heart shaped blueberry pancakes and double smoked bacon. They are making a gorgeous fruit salad to serve on the side.

Family memories are made of this. I adore it.

What is meatloaf? I've always thought it was like a roast beef but just googled it and am none the wiser LOL. Is it beef? It looks like it's made from mince?

Yes. It's made from mince and usually baked in a loaf, bread pan.

It's a very large beef burger. You eat it from the dinner plate with knife and fork and sometimes as a sandwich. People usually put it on bread the second day.
