Making my lazy lasagna, which hubby likes better than other versions, with uncooked sauce, béchamel, and sliced provolone and grated parmesan. You have to make the béchamel and cook the noodles, but it still saves the mess of cooking red sauce. Focaccia garlic bread.

Tonight is seafood night and we're having:

corn and clam chowder with cheese-toast croutons
pan-seared scallops with jalapeno salsa
salted-caramel banana bread for dessert, a little odd but tasty.

A salad, leaning more to the meatless variety. Romaine, half an avocado, olives, capers, cucumber, anchovy paste for spice, Feta, Parmesan, croutons, Mexican style tomatoes, garlic, paprika, dill weed, Italian seasoning. Served with a beer mug filled with skim milk.

Trying something new tonight -Spicy Brazilian style black bean and smoked tempeh stew, topped with your choice of chopped fresh tomatoes, minced red onion, sour cream, or shredded sharp cheddar.

Served with Yogurt Cornbread with chipotle and sweet corn niblets, and a baby spinach, cucumber and strawberry salad with poppy seed dressing.

Dos Equis beer.

Tonight it was parmesan/panko breaded chicken breast slices with lemon..baked. Served with new potatoes...browned in butter slowly til tender. Also, new carrots steamed in butter. Really good

If Son didn't eat up all the cooked bacon I will have a BLT. I think I'll go hide it.

Hiding it is a good idea. I thought I had bacon in my fridge this past Saturday because I wanted a BLT for lunch, only to discover that my husband had eaten it all - we're talking about at least 10 strips here. (selfish bacon-eating pig!)

I had leftover ham and potato salad. I also made a salad with strawberries watermelon goat cheese mint leaves and drizzled with balsamic vinegar
