Tonight parsley/dill meatloaf with garlic mashed potatoes,baby carrots,green peas,corn and lassi to drink. For dessert a Bartlett pear.

Grilled chicken, short pasta with lots of vegetables (red ball pepper, hot peppers, onion, garlic, basil), romaine lettuce, peach tart.

Yesterday's potatoes were a hit. Boil peeled and quartered potatoes until they were almost done, heated butter and olive oil 1:1 in a cast iron pan, added dry potatoes and savory, do not stir until the first crust forms, then a quick stir and in a pre heated 375F oven until the outside is golden. Do not overcrowd pan.

I'm not sure what we're having for dinner, but I do know that it will be at home and it will have some salt and some fat! Also a whole lot fewer carbs.

Feeling great, got to make a couple of calls to update family and make followup appointments, and then it's back to usual, mostly.

I'm going to be making a bolognese sauce with beef & pork to go with pasta, steamed broccoli, and maybe a spinach salad.

I never made the Faux Pho planned for a few days ago!

I've got rice noodles, thinly sliced boneless steak, daikon greens, mushrooms, celery, garlic, chiles, fresh herbs and a couple of cans of "Pho broth."

Hubby thinks he doesn't like soup (he certainly hates thick soups) so wish me luck.

Slow roasted heavily seasoned pork ribs, rice (butter), and salad. Crescent rolls on the side. Yum!
