Right behind you, Jrsygrl51- I am feeling poorly tonight and can't sleep. Since it's now today for me, dinner is going to be fish. Side will be a Knorr Pasta Side the husband picks out. Simple and fast - I have to work tomorrow. Just blech!
sorry some of you couldn't sleep last night: I did fine and have been up an hour now. Dinner tonight: well as I have mentioned, spoiled brat is going to use the Weber and I just know a nice top sirloin will taste great. As we are leaving on vacation in about 10 days I am working on empting the fridge, some of what I am serving isn't quite what I would have, normally with steak. We have some left over basil (I made pesto yesterday) I will use basil with pasta that is in the fridge. Also guess we will have a cauliflower salad with some greens added. I may have him grill squash as well.
I'm going to try the stuffed peppers with Cajun rice that was mentioned by Lodestar I think. DH lived in New Orleans for a while early in his NPS career and I think that meal will please him. The girls won't be home tonight so the peppers with a simple salad for dad and I.
Last weekend I took a trip back to the city I grew up in. Since Portuguese groceries are hard to find where I now live I stocked up. My freezer is stacked with handmade chouriço and linguiça. Tonight my husband is making a caldo verde...(Portuguese kale (green) soup). I think he is using a mix of the spicy chouriço and the mild linguiça. His soup is incredible! Serving with some crusty bread!
