I just topped the leftover pulled pork and baked beans from last night's visit to the bbq restaurant with a fried egg, and it was awesome! I felt like I was eating at one of the fancy brunch places.

I had the remaining few bites of cantaloupe and then 2 hard boiled eggs that I overcooked in the pressure cooker.

Turned out in the end, pretty good, but getting there was difficult.

I had to add more water than called for (the amount to mix the milk) because I tried to stir it with my egg beater and everything stuck inside of that. Rinsed that off with the bowl underneath, pour off the excess.

Then my stove doesn't heat the griddle evenly, so some patches cooked the cakes faster than others.

But, with patience, the good ones turned out nice, thin, delicious. I didn't even have to add butter (I don't use syrup) to the finished stack.
