Both kids had to work this weekend so the two of us drove over to the House on The Rock in Wisconsin for a couple of days. The weather was wonderful.
On the way back to Minnesota today we stopped in Lacrosse, WI and ate at the Marchant, a French restaurant, which was having the most wonderful Easter buffet:
Biscuits and gravy
Green chorizo
Eggs Benedict
Ham with horseradish sauce
Prime rib au jus
Salmon with Hollandaise
Fingerling potatoes
Asparagus spears
Cold crab legs, shrimp, octopus, scallops ceviche with lemon and cocktail sauce
Chewy hard rolls and butter
Today I made a chicken salad with leftover chicken breast, added some green salsa & had it on warm corn tortillas. Apple on the side & a cup of ginger chai
