No lentil breakfast lovers?

I've never been a bean or lentil fan but was casting about for something to eat for breakfast besides cereal and fruit. Trying to cut back on the sugar and carbs and increase the protein and fiber.

What I do is put about 3/4 or a cup of lentils in a bowl, pour in about a teaspoon of apple cider vinegar, a teaspoon of Evoo, cover it with shredded cheese and pop it into the microwave for 55 seconds.

When it's done, I sprinkle a little cinnamon, some protein powder and finally a sprinkling of nuts. It's warm and gooey and the different flavors and textures make for an interesting breakfast food.

It's great for the ol' bowels too. Within 8 hours, I have a perfectly delightful BM. Goes down smooth and fluffy.

The breakfast of champions.

Sorry but that sounds horrible to me. I have done sweet potatoes and quinoa for breakfast. I also like chia pudding and medium boiled eggs. A side of veggies us a nice edition when I have extra time.

What about breakfast tacos? Eggs, salsa, beans or lentils, salsa, avocado and a corn tortilla?
