his shop will close before 10 years. i live in nyc, any and all hard to get in restaurants don't last. they ALL close down, cos they all depend on trend, and not catering to clientele.

His web site said he learned to cook with his mother- they learned to use the food from his land. Said they even made their own cheese.

It isn't just the wait, it's the cost of the meal. No thanks on both counts.

But he doesn't need to appeal to the majority. He's doing just fine bringing in the few. My hat is off to him, but I won't be making a reservation for my family.

The food choice would scare me off. Just how much decent REAL food can he find? Bugs, worms, dirt? and deep fried tree bark doesn't sound like any kind of meal I'd be interested in, thanks!
