I don't know what to believe, regarding the many books and articles blaming wheat or carbs for health problems, but whatever the truth, my question is, what do you eat if you eliminate them from your diet?

I haven't completely eliminated carbs and wheat from my diet, but eat smaller portions of them. I eat more veggies, beans, proteins, fruits and unsalted nuts to compensate.

I've eliminated wheat (gluten), and I eat the same stuff I always have. Except the bread and pasta is made with gluten free flours.

I've no priblem with gluten, but do TRY to limit carbs as they do seem to pack on the pounds for me.

I eat meat, eggs, some cheese (not a huge cheese fan), cream, fish, shrimp, salad with vinegar and olive oil, limited fruits and some vegetables.

Nuts. I like almonds the best. Or I'll eat a little bowl of almonds and raisins. Chocolate covered almonds are good too.

Meat and vegetables. Generally chicken breast and veggies. My husband will eat rice or mashed potatoes along with his chicken and veggies because he's not cutting back on carbs.

For lunch, Greek yogurt and/or cottage cheese. For breakfast, an egg and some vegetables, sometimes with a sprinkle of cheese and a strip of bacon.

No Oatmeal, quinoa,grits,etc?

Eat loads of veggies, fruits and fish, chicken. No red meat. Some dairy. No bread.(Except for the monthly home made pizza where the crust is basically artisan french bread) Do eat plain oatmeal, grits, quinoa.

You really do not need much food(read that as total daily caloric intake) so the above fit the bill unless exerting yourself intensely and then your body craves nutrients which look like food. Bread is not really on that list.

Having Type 2 diabetes, I try to limit carbs but don't cut them out completely. We have cut out serving bread at meals. So no rolls or garlic bread, unless it's a big holiday meal with guests. We will have a small serving of something like potatoes or rice on occasion, but it's not an everyday thing. Eating out, I will eat half a sandwich with bread, and then just the insides of the other half. and will usually substitute veggies for fries. If eating a burger, I'll make it open face and will discard half the bun.

As for what we DO eat, at home we eat lots of veggies and protein, low-carb options (low-carb tortillas, sprouted bread for toast), almonds and cheese for a snack. Lots of eggs, spinach, mushrooms, cheese, black beans, quinoa, and cabbage in various forms, fish a couple of times a week, lots of broccoli and green beans. Yams in moderation.
