Jkgourmet, I wouldn't call that uninspired, I'd call it delicious. I love very cold fresh fruit on a summer day.

But my first thought to use up mangoes was frozen mango daiquiris -- unless you don't want to take a pitcher of alcoholic beverages with you ... (Some of my friends would be very happy to see me arrive with such, but we tend to have very very casual get-togethers!)

Mango juice,
mango smoothie,
mango and prawns salad,
mango cubes with vanilla ice-cream,
deep fried fish with mango cubes,
preserved mango slices with vinegar and sugar and some cut chilli

I have a jar of mango/habanero preserves I like a lot, just had a burger for lunch with some spread on the bun. I'd think a quick salsa made with the same ingredients would be good stuff.

I thought maybe someone had a tree like a neighbor of mine. I was going to suggest mango wine. That would get better with time I've been told.

Mango and papaya salsa, spiced with diced Fresno chiles, over a piece of grilled salmon is fantastic.

Mango mojitos would round out the evening.
