Most ethnic food in US are fast food because few Americans willing to go to a fancy ethnic restaurant except for trendy ones like Japanese and Thai.
Just because something is not fast food doesn't make it a "fancy" restaurant. There are thousands of ethnic restaurants where I live in Los Angeles that have sit down table service and are far from fancy. I can go to dozens and dozens of Chinese, Thai, Vietnamese, Indian, Middle Eastern, etc you name it and pay $10 for a meal including tip. And for Japanese? There are plenty of ramen, curry and cheap sushi places with table service here that are still affordable and not fancy

I would agree with you. I can sit down in mos of these restaurants and be served a hot, well prepared in under ten minutes, which is less time waiting than recent stops at In-N-Out and Chick-fil-a.
I have not found any cheap or decent ramen in Chicago or Tucson for under $10, however. It has been closer to $15 with table service.

Download the Chick Fil A app. I've been using it since it was released. I place my order on the app, it knows when I drive into the parking lot by gps on my phone and my food is waiting for me by the time I get to the counter. And it's already paid for so I just grab it and go. They were already my favorite fast food franchise and they keep getting better

Or I can head into my local Mexican place, get the daily special of entree, rice, beans, chips and salsa, and served with a bowl of homemade beef or chicken soup for $5.95, much less than what I would pay for the local Chick-fil-A.
We rarely go to a fast food place for ethnic foods. When eating ethnic we go for the real stuff. I guess we are all a little different. I think you are right. But lets face it, a lot of people depend on fast food for most of their dining out.
I can't believe people still list tacos and burritos as "ethnic" foods. Mexican and Italian foods are mainstream in California.
If you want to say that then Chinese shouldn't be considered ethnic either. Especially when you consider that a lot of common Chinese food is really stuff that was invented in America.
