Well, I googled it and it's definitely a thing! (I'm bored. I google stuff when I'm bored. )
There are plenty of recipes for it. The Pioneer Woman's is among them, but a lot of them are labeled Southwest Chicken Salad. I suppose in that context using southwest type flavors and spices, it would work pretty gosh darn well!
We never had chicken salad when I was growing up. When I make it I use celery and sometimes onion. Corn is what they use to fatten up livestock so I eat it very rarely.

However, my mom's chicken salad was shredded chicken, onion, mayo and either diced celery or celery seed. It was yummy. I don't like all the nuts and raisins and grapes and crap that a lot of people put into their salads.

I never ate chicken salad until I was, I guess, around 40. Mom didn't make it. I've had it with celery, onions, a bit of pickle relish, grapes, nuts and one version - one that everyone in town talked about as wonderful - was mayo and nothing else...not even salt. Yuk.
But never, ever whole kernel corn.
But hey...why not? Could be good.
I have had chiucken salad with corn in it. Actually, if the corn is roasted, it can add a certain sweetness.
Personally, I have also added grapes, chopped apples, cranberries, and mustard to chicken salad at times. Chicken is a pretty blank canvas.
