Followed by a Root Beer, Chocolate float and apple pie.

I need a green vegetables. Normally I would go with hot (spicy) collards. I have to go shopping for the collards, so this is the chance to try something different. Any other suggestions that would fit the theme?

Steamed broccoli with butter and salt and pepper.

Broccoli salad (from the deli or homemade)

Green salad

Coleslaw with a vinaigrette dressing

I thought about the cole slaw, but it seems too close to the potato salad. Same for the Broccoli. A simple green salad is simple and would hit the spot on a nice day like today!

Go for the heart attack, add a nice wilted salad with spinach and leaf lettuce

I add very thinly sliced radishes and sometimes chopped boiled eggs, oh and of course crumbled bacon (from frying it for the bacon grease)

I was headed for the simple salad, but when I stopped in the Kroger they had a Greek (Tomato, Cucumber, Onion, Olive) Salad.

That was the winner!

I would make Broccoli and Cauliflower Salad. I promise you, everyone loves it.

1 head broccoli
1 head cauliflower
Broken into bite sized pieces
1 pt. cherry or grape tomatoes
1 small onion, chopped
Dressing:
1 cup mayo
1/2 cup sour cream
1 T vinegar
3T sugar
1t @ salt and pepper

Mix dressing well until sugar is dissolved. Toss with onion, broccoli and cauliflower.
Chill.
Add tomatoes just before serving.

Slaw. We never have anything "hot" with ribs, other than beans or spaghetti. Green=slaw.
