Here are 2 recipes for corned beef and cabbage the first one I made and the 2nd one was done by my husband. I leave the fat on but you can trim it.
Recipe 1.
2 med. onions, sliced
1 (2 1/2 to 3 lb.) corned beef brisket- rinsed and pat dry.
1 c. apple juice
1/4 c. packed brown sugar
2 tsp. orange peel, finely shredded
2 tsp. prepared mustard
6 whole cloves
6 cabbage wedges
Place onions in crockpot. Trim away any fat that might be present on the corned beef brisket. If needed, cut brisket to fit into crockpot; place on top of onions. In a bowl combine apple juice, sugar, orange peel, mustard, and cloves; pour over brisket. Place cabbage on top of brisket. Cover, cook on low setting for 10-12 hours or on high setting for 5-6 hours.
Recipe 2. Made by Husband
1 (2/12 to 3 lb corned beef brisket) I rinse my corned beef and pat dry first
2 medium onions sliced thin
1 head of cabbage shredded (if a large head doesnot fit into crock pot then use 1/2 of the head)
1 tsp black pepper
1 tsp salt
1 bottle beer-any type- I used a dark beer because that was what I had on hand.
2 cups water
3 large russet potatoes peeled and cut into cubes.
2 large carrots peeled and cut into medium thick slices.
We do not use the pickling spice pack that comes with the corned beef-never have and it's still delicious. You can use it if you like though.
put half of the onions,potatoes, carrots and cabbage into bottom of crock pot. Place corned beef on top. place remaining vegetable on top, season with salt and pepper. Pour beer and water over everything and set crock pot on high 5-6 hours.

sounds yummy, I wouldn't use the brown sugar but the rest is pretty much the way we do it. I don't think there is anything better than corned beef.
Interesting. I have always added the cabbage the last half hour. Not cooked the cabbage for 8 to 10 hours.
I cook mine on high for 6 hours. I like my cabbage soft.
