Here's a traditional Scandinavian recipe. It's best not to make them too thick. They should be delicate.

Dawn- do you think I would still have to refrigerate and make into balls if I plan on using my tiny molds?

Refrigerate? I don't know. I do know, though, that the refrigeration changes the consistency of the dough, making it easy to work with afterwards (less sticky). I suppose you can try it without refrigerating it and, if it's difficult to work with, throw it in the fridge for a bit.

Balls? No. If you're using the molds, there's no reason to start with balls. The balls are just for the sake of uniformity and then to squash down with a fork. So this part you can definitely skip.
