We also have french toast casserole for Christmas breakfast. And for the same reason, its easy to just pop in the oven Christmas morning.

Just give me a piece of left over pie or cake and a cup of tea for breakfast. I usually don't want to eat until around noon. A brownie with frosting and sprinkles would work just fine too

I love ebelskivers, but our pan is garbage so half the time they don't come out right. But the half that do are AWESOME.

Usually we don't do much, and this year since Christmas is on a Sunday, we're waiting to hear if our church will have services or just do Christmas Eve (which they did last time Christmas was on a Sunday). If we're home, I may get up early and make something fun for the family. Maybe I'll whip out the ebelskiver pan and give it a shot.

I had never heard of those. Looked it up on YouTube and they look so amazing and good.

I don't have much at all for breakfast on Christmas Day, because of the enormity of the Christmas meal at lunchtime, which would be the turkey, sausages, roast potatoes, stuffing and a load of vegetables. So I'd usually have a light breakfast of cereal or toast.

But even before I'd have breakfast, I'd make sure the turkey was cooking up in the oven! I'd like everything to be cooked for lunch by about 2pm at the latest.

I make Eggs Florentine (cheese/spinach sauce on poached eggs) with bacon, sliced tomatoes, toast and English muffins on the side.

If you don't mind me asking, what is overnight egg casserole? I have heard of the french toast one but not that.

Hi,

This recipe gives you a general idea: Christmas Breakfast Sausage Casserole Recipe - Allrecipes.com

There are quite a few variations out there.

Just the 2 of us; in our family we draw names for gifts, (adults) and open them on Christmas, but we do have a lot of stocking stuffers to open Christmas morning. After that we usually have lox and bagels. We do give each other gifts, but not much; saving our money for something special for the house or a vacation.
