When cooking with alcohol, what proof or percent can ignite in a saute pan? Isn't it 50% alcohol (100 proof) or stronger?

I guess you can do it with 40% alcohol such as rum or cognac (https://en.wikipedia.org/wiki/Flambé). I've never tried to flambé anything though...

Yes, regular 40% works but, as Wikipedia notes, it has to be at right temperature to produce vapor that would ignite. Make sure to have a fire extinguisher handy!
