Tonight we are having soba noodles with shrimp and crab in a rich sauce (made with seafood broth, garlic, butter, a little cornstarch to thicken it, lemon juice and scallions), grilled asparagus and chocolate cream cake for dessert.

Looking at some of your menus makes me miss cooking. But when you work full time, live alone in a small truck camper with a mini fridge, two burner stove and no oven or microwave oven, you make simple meals or take advantage of take out foods. Tonight it was a simple chef salad and a bottle of grape-flavored water.

I ate an early dinner today. Enjoyed two veggie burgers. Dessert was a small bowl of vanilla ice cream with a lot of raspberries.

Tonight: Mattito's Martin dinner. That would be a cheese enchilada (chili sauce), a chicken enchilada (sour cream sauce), beef tamale (chili sauce), guacamole salad, Spanish rice, refrieds, queso, and iced tea.

We grilled a marinated steak along side some zucchini and asparagus. All cook easily and quickly on our new Weber.

I had also made a roast beet and almond salad (Ina!) and I forgot it was in the fridge! Now I know one thing we will be having tomorrow night ! LOL

last night was panko-crusted turkey cutlets, okra & tomatoes, with a fresh peach for dessert. Tonight will be salmon and broccoli with lemon butter, and another peach
