2. I have enchiladas in the freezer that I made a couple of months ago.

Actually tonight (OK, ~2 p.m., I've been up since ~2 A.M. so it was dinner time for me), I had a total comfort-food dinner ... London broil in the crock-pot. About 3/4 lb. London broil (bought on sale a month or two ago, $2.49/lb. IIRC) plus 2 cans of the "healthy" version of Campbell's cream of mushroom soup (yeah, yeah, it's not gourmet, but it's delicious as crock-pot gravy) plus a chopped onion plus pepper, oregano, onion powder, garlic powder, paprika, and thyme ... started the slow-cooker ~7 a.m. just before I left for work ... and my house smelled AMAZING when I got home about 6-1/2 hours later!
I made mashed potatoes to go with it -- the crock-pot gravy is FANTASTIC. Yeah, I have decided this is one of my favorite meals. Probably my FAVORITE comfort-food meal. Absolutely delicious (the kitties were hovering), and so incredibly simple to make!
Tomorrow I will likely have some of the leftovers over noodles -- just as yummy!

Fast food from somewhere, I'm sure, but haven't decided where yet. It's only 47 degrees and rainy. I worked from home all day, just now showered, my hair's still wet and I'm wearing a T-shirt and yoga pants, so I think it will be drive through from somewhere!
Tonight spaghetti with roasted tomato sauce. To drink lassi. For dessert green grapes.
