Tonight I am trying the Ina Garten chicken breast with basil and sundried tomato recipe that gentlearts posted on another thread. It looks really good! I will serve with rice pilaf and roasted asparagus.
Enjoy your Monday!!
I have either a stupid cold or the flu; I think it is a cold; regardless I am not a happy camper. I haven't bothered to do my weekly menu yet, so was undecided but not think I will do spoiled brats top of the list dinner: no, not speghitti but tuna casserole. It is really and he loves it. I will make a green salad as well. Good thing about the tuna casserole it freezes well. So if I don't feel like eating (fat chance) I can stick some away for a later date.
Feel better Nita! Lots of chicken soup, orange juice and tea with honey. Tonight, I'm making meatloaf (mix of beef, pork and veal) with roasted potatoes and fresh spinach. DS has asked for deep dish apple pie, so Apple pie he shall have.
Tonight sweet poato /cilantro curry dish with chapatis or leftover green lentil ( moong daal) soup. With it a plate of onion, tomato, cucumber slices. To drink lassi. For dessert orange and grapefruit slices.
My cassoulet was a failure: it looked beautiful, but the meats were overcooked and insipid. The only edible bits were the crusty chicken thigh skins (man, those were great) and the beans themselves. Seven hours wasted on a mediocre dish.
