I am making sautéed chicken with morels and tarragon. It is rich and delicious. I predict extra time on the treadmill tomorrow.

scrambled eggs.....crack 4 eggs in my magic bullet and whip it good

then add some cheese

Hotdogs and beans, cut up fruit. I used B&M beans, with a can of kidney beans, brown sugar, an onion and bacon.

I'm making a big Mediterranean Salad with baby spinach leaves. grape tomatoes, thinly sliced red onions, shredded carrots and red cabbage, hard boiled eggs slices kallamata olives, stuffed grape leaves and crumbled feta cheese with a lemony Greek dressing.

Served with pita and red pepper and pine nut hummus.

Unsweetened iced tea.

the meatloaf wasn't done at dinnertime last night, so we just ate the veggies last night. Tonight was meatloaf and a stirfry of cabbage and spinach with some ginger, as I didn't have enough of either to make a side with just one of them.

I just drooled a lil bit!



Tonight it's baked thin sliced chicken breast that I had marinating in Ken's Lite Northern Italian dressing, jasmine rice (love how it makes the house smell!) and green beans with thinly sliced garlic sautéed in evoo (garlic gets nice and crispy).

Lil smokies in BBQ sauce/cherry preserves, baked beans, saltine crackers. Also orange wedges.

I'm going to mix up my first batch of hummus tonight too, I bet it tastes better the next day.
