I was reading an article in a magazine today that talked about bean pasta and how high in fiber it is. I rarely eat pasta, even the whole grain kind, but I thought this might be interesting to try. I'll pick some up if I can find it, but thought I'd ask if anyone has any brand recommendations, or thoughts on the taste and texture.

I had black bean spaghetti and it was delicious, also a great source of protein and fiber.
The noodles were the perfect chewy, but not rubbery, consistency.
Bean pasta doesn't really taste like anything, just like regular wheat and brown rice pasta, making it the perfect vehicle for your sauce.
Here are some serving ideas. Yummy!!

I've tried soy pasta and corn pasta. The soy was indistinguishable from wheat pasta in texture and flavor, but the corn was not something I'd make again.

This black bean spaghetti sounds interesting. Low carb, too!

I was very excited to try this black bean spaghetti. I had googled it and the nutrition readout showed 5 net grams of carbohydrate per serving, and Elnina as well as reviews I read said the texture & taste was good.

I found some at a local health food store today, same brand as I'd read about. But the nutritional info on the package indicated a way higher carb count, like double what I'd read per serving.

I didn't buy it.

Trader Joe's has a black bean pasta. Not spaghetti--the short curly/corkscrew things.

I am sad though that they stopped selling their corn pasta. I really liked it.

A few months ago, I tried Banza pasta, which is made from Chick Peas/Garbanzos.
I may have overcooked it, as it turned out somewhat...mushy.
However, I did read a comment somewhere online, stating that this product tends to turn out mushy, so perhaps that is just the nature of this product.
It tasted fine, and it is MUCH lower in carbs than wheat-based pasta, so I just might buy it again.

I was just at a store where they gave tiny samples from a company called Banza.

It was pretty good - but much more expensive, I think around $5 a pound.

What did you expected?
Most black bean pasta has 23-25% protein and 12-15% fiber (but I saw pasta with 48% fiber too)
