I threw in the ama ebi just to finish the lists of shelled things that some people will find difficult. What the heck.

And really one of the things I found really great was oysters on a grill. Give up a little pulse of steam as the seal fails. Grab with gloved hand...pop with shucking knife and dip the poached oyster in drawn butter...right up there with good sex.
