I haven't bought prepackaged deli meat in years. I get it sliced at the counter where I can see that it is an actual piece of meat (roast beef, ham off the bone, pan roasted turkey breast, etc.). When it is shaped like a rectangular loaf or a ball then chances are it has been heavily processed from the scraps they smashed together to reconstitute a replica of what a roast would be. The striations or lack thereof are a dead giveaway.

Lunch meats were always a convenience for cheap or quick sandwiches
Nitrates and nitrites are a new food demon
And low carb diets ( no bread) or sandwiches
Have hurt the whole category
Although because of the high protein diets we have pushed the deli sliced whole muscle roll ups. And have cut them into cubes and these are selling well ( deli meats not used in breads)

I have returned what was left of grilled T-bone steaks that were so stringy, gristly and chewy we couldn't eat them and the store manager apologized and gave a full refund. I always hold onto my receipts for a week or so in case something flops. I've never been turned down for a store return.
What helps for returns of any kind is to clearly and briefly state what was wrong and offer what will resolve your situation (exchange, refund, store credit). It keeps the employee from having to defend the product or from taking offense (as long as you are respectful and polite). It keeps them from having to guess what you are expecting them to do. I've seen so many people trying to return something and all they do is complain and complain, almost as if all they want to do is make the clerk feel like they are being attacked. I don't recommend that.
