This is what I have done when I have too many peppers to use at one time.

1. Dry the peppers and if you wish, grind them into powder.
2. Pickle them with sliced onions and carrots. This also makes them milder.
3. Make pepper mash (ferment) them with salt. The mash is used in turn to make other sauces. This also makes them milder as you usually remove the seeds.

I think I will have DH smoke them and then turn them to powder. He had done this with the last batch and I dropped the glass container and broke it....

Plus I will make some oil.

I think the jelly might be over my pay grade, I've never made a jelly before.
