I had a brunch buffet at the Marriott in Boca Raton. Lots of salad and some sliced turkey and lots of fresh fruit. Real mashed potatoes with the red skins left on. A feast none the less.

Ham, au gratin potatoes, sweet potatoes, asparagus, deviled eggs, fruit salad. Dessert was Key Lime pie.

Default What's on your Easter menu?

I'm having ham and cheese potatoes, but I'm wondering what else to have. I associate Easter with spring, and spring with asparagus and maybe carrots (because of the bunny thing). I'm thinking spinach, carrot cake...maybe.

I'll figure something out, but I'd like to hear your ideas.

I love Easter. I don't know exactly what I will do this year. If it were at my home this is what I would have.

Baked ham
Squash casserole
Asparagus and hollandaise or cheese sauce or green peas and onions
Orange Jello carrot and pineapple salad
Deviled eggs
Potato salad
Stuffed celery
Strawberry shortcake, another dessert and some kind of Easter cookie

I've been thinking about the Watergate Cake mentioned on the forum if I need to take something to a dinner. Easter is still up in the air around here. I have some pretty Easter dishes. Three of my favorites are a bunny cookie jar, a bunny butter dish where the spreader makes the tail and a bunny egg plate. Once I put the bunny cookie jar out I usually leave it on the counter until fall. He looks happy sittting on the counter and blends in well with the turquoise in the kitchen.

Hope this gives you some ideas!
