No green mangoes for me. My wife has a pineapple corer. Works great. I think Nomad just sliced it in half top to bottom. Then dug out a little space for the peppers. I take that back. The pic is of it already cooked so he apparently just cored it about 1/2 way through.

I have a flat bit for a drill motor that is only used in the kitchen a bit used to drill out flat bottom holes in wood. 3/4". Not big enough. Going to get a 1 1/4" so more room for stuffing. I've use diced ham and jalapeno before. Next trip to the market Mangoes. Now for a hot spicy mango stuffed pineapple. The adventure has begun.

All of it looks good. I have a few favorites: yes, one is mango or pineapple salsa. I have combined the two many times. Also the roast tomato/bacon jam I posted the recipe for on here about a week ago and my favorite if I have one is simple. I use it with eggs rolls or pot stickers: All I do is take some jam, usually strawberry, mix it with hot Asian sauce, a little lemon juice and soy sauce. It is wonderful. I even use any extra on the rest of my meal. One of the best combinations there is, has to be sweet/spicy and sour combinations.

5 Peppered Pineapple

The core was drilled almost to the bottom and stuffed with the peppers. As it cooks it will have Cinnamon Whiskey added to the core.

It could be good without the peppers. I like my tastebuds to be able to taste my food.
