I am a cheese lover but forget the cheddar on pizza. There is a time and place for most cheeses and pizza is not the place for cheddar anymore than one would put blue cheese on pizza. As for low fat unless you are going to eat it two or three times a week, the fat in the cheese isn't going to hurt you. Low fat cheese as mentioned doesn't have the same texture thus it doesn't melt well and it just doesn't taste right. There are some low fat products that are great substitutes but many don't have the same flavor or texture. It is just as healthy to cut back on the amount as it is to use low fat cheese.

Don't make pizza then. Pizza is supposed to be high in saturated fat. In fact saturated fat isn't bad for you at all.

I have only seen cheddar as part of a blend of other cheeses (usually part-skim mozzarella, parmesan, and provolone) on frozen pizza. Never a "real" pizza. And I have never seen a pizza with only cheddar. That would make my head explode. :-)

I agree but I am thinking the op meant adding cheese maybe. I am one who used to hate frozen pizza, then we got to the place where we started buying them all the time and now, we are back to not liking them. They are ok if doctored up but our problem is, we don't like it left over. There is something about re-heating them that just doesn't work and a whole pizza is too much for the two of us.

Why not just put some sauce and then sprinkle with your favorite grated cheese? Romano or Parmesan or Grana Padano? Ounce for ounce they are comparable but you just need a sprinkle of the grating cheeses so you end up way ahead on fat content. Maybe slice some fresh mushrooms on it and you might find it a terrific substitute.

25% Extra sharp cheddar in the mix with Parmesan is awesome! Especially with Canadian bacon.

No. No cheddar, no Canadian bacon (even Canadians don't eat that) no pineapple, no ranch dressing, no brown gravy. You're not making breakfast, you're not making a sandwich, you're making pizza.
