I diced a BUNCH of onion, tomato and green bell pepper intending to make chili.
Then I got lazy and knew I wouldn't be making it so I put it the container of veggies in the freezer while I went away on vacation for two weeks.
I took them out like 10 days ago so they've been in the fridge now since then and now....I'm ready to make some chili.
I was going to throw it out and get new veggies but upon looking in the container today they seem fine...they container was sitting in a section the fridge that is known for freezing our fresh vegetables if kept there. I touched the diced pieces with a fork and they don't seem overly mushy.
But 10 days in the fridge seems like too long...is there invisible bacteria or other things likely to have formed that make it not worth the risk? I hate to buy this stuff all over again. I'm making a large crock pot so it took a lot of time to dice these up. But I certainly also don't want to get sick.
they should be ok but I am not sure there will be much flavor left. If it were me I would probably toss them, but not because they might be spoiled as much as just old and mushy. Of course if using in chili I guess it doesn't matter if they are mushy. I would try them, just a little before using them though.
As long as they look and taste and smell fine, I'd use them. You'll be cooking the chili at high enough heat to kill anything, anyway.
I wouldn't use anything with visible mold or a rancid smell or taste, but absent that, if it smells and tastes okay and the texture isn't off, I'd use it. If it's been continually refrigerated and not sitting out, I wouldn't really worry, personally.
I agree, I'm not even sure if it would make a difference in taste of not.
It would cost under $5.00 to go buy fresh and start over.. But that's me and it's not my Chili..
The peppers would be the first to go. They would likely have lasted longer if never frozen. Though I say this, I myself probably would toss them and start fresh.
I reassessed the 10 days after thawing. That's a bit long.
