Thanks for all the ideas :-). I have never tried paprika or mayo with mashed potatoes, will try that.... I am getting hungry reading all this :-). And garlic... oh, I love garlic....now I'll have to make myself a snack, LOL.

You know what? It is not so much how I like them the first time around, but the second.

Potato cakes! Woohoo! I have not had them in forever! Just ball up some mashed potatoes and smash them into a cake, fry up in some butter til crispy and golden.

OMGosh! So good. I am thinking I may just have to make mashed potatoes tonight, whatcha think?

I normally don't cook to have leftovers, but maybe, just maybe... tonight I will!

That's too funny, my Mom used to make that in Germany, I have never seen anyone make it over here, but it sure is good!!!!

I don't use paprika every time, but I have definitely tasted and enjoyed this spice with them. Ditto roasted garlic.
Sometimes I'll mash a parsnip in my potatoes--it adds a bit of subtle sweetness.
I always snip some fresh chives or scallon tops to sprinkle on top, as well.
Also I always mash with some butter and a dollop of milk or cream or half + half.
Mashed potatoes are *the* comfort food for me.

Wasabi, horseradish, roasted garlic, scallions, chives,bacon,sour cream-lots of cream and unsalted butter-anyway you make them they are the "bomb".

You forgot the best ingredient; truffle oil. A little drizzle of truffle-infused olive oil is pure heaven. Or better yet, fresh truffles, grated and stirred in.

Really? Never seen it made here... I love those! My Grandma used to make them for me when I was little, and when I got old enough to cook... it was my favorite thing to make, and eat!
