I really only like pizza with a max of 3 toppings, but 2 is better. Maybe fresh basil & pepperoni or ham & pineapple. But last night dh ordered one with about 15 toppings, I was not at all impressed. They strew a bunch of onion & green bell peppers over all the meat, making it hard to eat without making a mess. Plus the veggies were not cooked enough.
For me it depends on: how hungry I am - where I am getting the pizza from - what kind of pizza ( thin thick crust ) and a few other variables
I prefer fewer topping if its an Napoleoni type pizza as its all about the crust and real mozzarella cheese - also fewer toppings on a thin crust pizza for me I like best - or if its a white sauce pizza I prefer fewer toppings
Now if I am in full blown caveman mode and really hungry craving meat cheese and grease ... yea drag that puppy thru the garden and jam peperoni sausage Canadian bacon and other meats all over it. For obvious engineering and principles of physics, a thicker crust works best for this hearty pizza.
If it makes a mess eating it ... just dump the spilled toppings on the next slice and get after it again
I ordered a big take out pizza from Costco food court just last weekend. Best deal in town for a huge $10 pizza. I am gonna ask them on the next order about doubling up on cheese sausage pepperoni and see how that affects the price.
To me, you have to be careful with excess veggie toppings, because they can be prone to releasing moisture, which is troublesome from a texture standpoint.
with 15 toppings it is almost sure that there will be a couple of items that don't go well together. I keep my toppings to about 5. Usually sausage or pepperoni, and onions, and mushrooms and maybe extra cheese.
So, here’s the thing. Does the topping add to the pizza in a significant way? My feeling is..pepperoni adds both fat and flavor. Good and good. I get mushrooms and black olives and call it a day. I could add a bunch of stuff, but, really, why? It’s about the crust, tomato ratio, isn’t it?
Funny you should mention it. I just took my homemade pizza out of the oven (I do not order pizza out).
It is on naan bread and has 7 toppings: diced tomatoes, spinach, onion, mushroom, olives, a little cheese and turkey pepperoni. Seasonings are basil, garlic and pepper.

No, I use naan bread that I purchase. And yes, turkey pepperoni. It has 70% less fat than regular pepperoni and I honestly can't tell the difference. What can I say, pepperoni is a guilty pleasure of mine so I do what I can to be able to eat it at all.

Oh I wasn't making fun of the turkey pepperoni ... it just caught my eye.
Made me laugh alittle as I remember back in the early 80s when I got out of the military and was pretty poor hanging out in FL working some dead end jobs. One of the food items I lived on was turkey bologna. It was cheaper than regular bologna so I opted for it instead. And yes it too tasted similar to regular baloney.
I make my own fathead pizza, which is a crust made of cheese and almond flour. I top it with pepperoni, sausage, peppers, basil leaves, and more cheese.
Or I might make a pizza bowl, which is all the pizza toppings tossed together in a bowl and heated through (no crust).
