Here in New Mexico people are serious about their beans and canned beans are looked down upon by many.

But honestly, I find canned beans to be indistinguishable from freshly cooked ones. So I save myself the time.

partial to black beans soaked and cooked....others ok canned. I put them in water late pm and cover, then next am, they are ready to cook...

If you're concerned about the high sodium, there are quite a few low sodium varieties. I know a lot of the organic ones have very low sodium content.

That being said, invest in a pressure cooker. Most beans are cooked in 30-40 minutes in there.

Always used kidney beans in my chili. I am a lot less fond of eating them alone, but they are a lot better than pinto beans.

I use both but canned are so much easier. Honestly I cannot tell the difference.

I only use black but sometimes use black eyed peas.

If you're bothered by using canned beans, the easiest solution is to cook your own. Problem solved.


Nothing in the world wrong with canned beans. All the hard work has been done, and not everyone has the time to prepare beans from the dried state.


So, people who don't want to eat canned beans don't have to eat them, yet they are available for those who find that they meet their needs. Choices are good.

I've always eaten the dried kind just to avoid the sodium content. Mostly black beans and pinto, although I will do also do 15 bean soup (comes prepackaged) in the winter months. I hardly ever soak the full bag, simply measure out what I need the night before. When I buy them in bulk they are dirt cheap, probably cheaper than canned. Which isn't an issue as they last a long time when stored properly.

I just bought black beans at the bulk food store and they were 49 cents a pound. You figure you get more for the money than canned because the water weight is taken out. Such a great health food on the cheap, great way to get your fiber. I may add a small touch of salt in the cooking process but little in comparison. I prefer mostly to use spices like cumin, cilantro, bay leaves. Onions and garlic also lend a nice flavor. They can make a very inexpensive and yummy meatless meal when you add rice and some salsa, a side of corn bread.

I also really love warm white beans with roasted fennel in the fall and winter. With a touch of grated parmesan, olive oil, garlic, spinach, red and black peppers, salt. I roast the fennel first, then add the rest and bake it all together. Another great dish when you want to go vegetarian but still want comfort food.
