I always feel a little guilty eating or buying pork. Pigs are treated horrible for human consumption.Smithfield sells most pork and I refuse to buy it. Sure local can be better but my heart goes out to pigs, particularly sows.
Yup, me too! For every few months I spend on the internet I learn a new word. I'm not sure that justifies all my time though.
Simplest tasty pork chops: Bone in loin chops about an inch or slightly more thick, salt, pepper, minced garlic, a little rosemary, olive oil. On the grill, under the broiler or even in a pan on the stove.
I cook pork loin in the pressure cooker at least once a week. I use it for pulled pork, tacos or enchiladas. I cook it on a trivet, and use beer or vinegar for part of the liquid when making pulled pork. When I cook it for enchiladas, I use beef broth for the cooking liquid and cook dried peppers in the liquid for the enchilada sauce.
I started cooking it because I can get it for $1.89/ lb. That's the cheapest meat I can buy, even cheaper than chicken.
I found pork shoulder butt (odd labeling, I thought - it did have a flat bone in it) at the store a couple of months ago for 79 cents/lb. Bought three of them. I cooked the first one on the stovetop in a dutch oven until the meat fell off the bone, and used it for taco filling. When we got tired of tacos, I added a little vinegar and BBQ sauce for sandwiches. When I get pork loin, I slice it into thick chops. I usually grill them, but there are various skillet dinners I make with them, too.
It is very easy to overcook pork chops, particularly very lean, boneless ones, but I think some people still overcook them out of fear, as well. It's okay for them to be a little pink in the middle.
It's going a little OT, but one of the things I love about having a freezer is that I can stock up when I find meat on sale. I usually pay $1.79 for pork loin, $1.99 for boneless, skinless chicken breasts (considerably less for other parts, or for bone-in breasts), and even found lamb once for $2.99, shoulder chops, if I remember correctly. I bought every package they had out, as lamb is rather under-appreciated here, and not always easy to find at any price.

I wasn't going to get on my soapbox for once, hahahah ...but I only buy organic meats, eggs and milk.
I can only hope they take better care of the animals...they claim to be 'consciously raised'...

on the outside, juicy tenderness inside...
but doc says no red meat. sigh.
No one seems to buy the grass fed lamb chops and roasts at my store, yay...
so I buy tons at 30% off. Love 'em, too!
