I personally didn't like the Mexican vanilla I purchased at Penzey's, it has a chemical note to the taste. You also have to be careful with Mexican vanilla since it sometimes/often contains coumarin (via tonka beans). I like Nielsen-Massey Madagascar bourbon extract and paste as others have said, but the best vanilla I've tasted is Nielsen-Massey Tahitian extract. It's expensive, however - my 8oz bottle cost $35. It has a richness and complexity that I've not found in other vanillas. Its best before date, by the way, was in 2016 -- but it still tastes and smells the same as it did when I purchased it.

OP, if you try Penzey's, be sure to register and sign up for their catalog. They are very generous with sending coupons for free products. I have been shopping Penzey's for years and they treat their customers vey well.

Yes. In fact, they often stuff some surprise items I didn't order in with my order to fill up some of the space. Penzey's is one of my favorite companies. I started shopping with them years ago as they were a great place to get both whole and ground ancho chilis. Eventually, I ended up ordering everything from them.

Madagascar is the source of much of the vanilla bean supply that goes into the production of vanilla extract. It seems the orchids were severely affected by a recent cyclone and prices are expected to remain high for the next few years.

(Sorry, tried to post a link from the Financial Times that explained the problem, but it didn't work. I found it by googling vanilla price increase.)

I probably go through a quart of vanilla a year. love the stuff.

I tried to grow vanilla vines (it's a kind of orchid, grows well here), but never got them to flower.
