How can bread be "overrated"? Bread was a staple of the human civilization for thousands of years. In fact, the word "bread" is often used as a poetic reference to food in general. We even have an almost visceral reaction to the smell of fresh-baked bread. It's even mentioned in the Bible many times. Which isn't the case for foods like meat or vegetables, unless we're talking about dietary rules in Leviticus. (The bread in the Bible is probably pita or matzah.)
Now, I get that we know facts that we didn't know in the past. But I still don't think bread was ever "overrated". In the 90's, it served strictly a utilitarian function, a carbohydrate filler for the missing fats. (Consider the low-fat fad, and the "6--11 servings of grains" on the 1992 Food Pyramid.) Today, it gets undeservedly lambasted for its gluten and high carbohydrate content.
