Going out with friends tonight...

I’ll probably get Chicken Fajitas, which comes with: rice, beans, pico de gallo, guacamole, sour cream, and homemade tortillas.

I finally took stock of my neglected refrigerator and figured out what I could make to use the odds and ends up. We're having what I've decided to call Mexican lasagna. Corn tortillas, a jar of Daughter's salsa with green olives, a quart of canned ground, fried elk, a green bell pepper, an onion, dash of cayenne, refried beans, black beans, corn all mixed with a few eggs beaten in milk and layered with lots of mozzarella and cheddar and baked for 45 minutes.


I chopped up and threw out a head of cabbage for the bunnies but I see it's still there. They were chewing on dried leaves and I felt sorry for them but they're still chewing on dried leaves. So go figure. . .

Spaghetti with tomato sauce, mushrooms, olive oil, basil, garlic & herbs. Garlic bread. Green salad with Italian dressing. Drank Sierra Nevada Pale Ale.

roasting the duck that we didn't make for New Years- orange glaze and extra spices, and on a bed of sweet potato and broccoli ( I was craving broccoli and so added it in last minute)- its out in 10 mins ... !!!!!!!

I have a pork tenderloin roast marinating in lemon juice, garlic and olive oil. I will cook that tonight with mac and cheese and a carrot dish. I'm not sure what I am doing with the carrots but I will figure it out!

Tonight we are having Salmon and cous cous. With the entree I am doing cold slaw even if spoiled brat pouts everytime I say we are having it: he can be suck a toddler from time to time, but I am teaching him to eat whatever I serve and clean his plate. After almost 60 years he is learning.

Tonight my favorite....cabbage, bacon and noodles. A true comfort food at our house.

Brown a lb (or so)of bacon, save drippings....one med sz head of cabbage, chopped up like slaw.....add to bacon and drippings....saute, breaking up the bacon as you stir the cabbage til limp... then add 16oz pkg already cooked and drained egg noodles. Stir and continue on low heat til all noodles are coated.

While cooking I season with black pepper, and occasionally a lil bit of celery salt. Serve hot

Note: For the best most flavorful outcome use the same pan you cooked the bacon in...I use a smallish roasting pan, or a cast iron skillet (s) 2 skillets for a whole batch, or 1 for smaller amounts .....for the whole cooking process.
