This sounds great. We always eat late (not usually at midnight, but typically after 8:00 or so). This is just how our life, and schedules (roll). I work 9 - 5 and coming home and cooking is often my way of relaxing, but alas, it means a late dinner for us. I'd rather have real food late then fast food early any day.

Ended up having tempeh tacos and cilantro-lime rice for dinner. Making another portion of rice in the IP mini right now, so my daughter can take the leftovers to work tomorrow. We've cooked dinner together all week, and while our execution hasn't necessarily been perfect, it's been really fun, and we've eaten like queens the entire time. And if that wasn't enough, we inspired each other -- finally! -- to clean our closets top to bottom in preparation for updating our wardrobes. The boys need to go camping more often!
