We had cheeseburgers loaded up with lettuce, tomato, pickle, sauteed mushrooms and onions.

I prefer my Grandma’s home-cooked Chinese food, but tonight I settled for takeout.

Its not really a recipe, but this is what I did.

Cut about 6-8 pure corn tortillas in triangles and fit enough to cover the bottom of 13x9 baking dish. Preheat oven to 350'. Saute 1lb. ground beef until cooked/drain then add diced fresh cut onion. Cook another 5 min. I also added diced bell pepper. First layer, tortillas, spread re-fried beans over them, sprinkle fresh monterey jack cheese, then ground beef/ veggie mixture. Pour half of pouch Frontera enchilada sauce and repeat layers. Cover with foil bake 30min. ( optional green onion, gauc and black olives after done baking)

Its really filling and hearty, makes plenty for several meals.

* I would not advise mole sauce that has a different flavor.

* Frontera brand enchilada sauce is all-natural, no fillers of soy or wheat., way better then the cheap canned enchilada sauce that has unrecognizable ingredients.

DH is having left over beef tounge and pasta with sauce. I am not sure yet.

I was grocery shopping and ran across a daisy ham. Having no clue what it was I bought it. After researching I see it is used in New England Boiled Dinner. I grew up with this meal but we always used a bone in smoked shoulder. I guess the daisy roll is a boneless smoked ham/shoulder.
I will cook it up tonight with red potatoes, carrots, onions and cabbage. I will serve with rye bread.

Tonight potato and green onion curry/(aloo hara pyaz sabzi) with cilantro chapatis,cucumber raita and lassi to drink. For dessert 1/2 a pink grapefruit.

not quite sure: we are about to spend the day running errands so dinner will be easy. I am thinking, maybe pizza from Aldi's as that is one of our stops today. Otherwise I will just fix something like maybe a steak and a salad. Whatever it will not be complicated in any way.
