Change of plans...... I was left-overed out, so I made hot and sour soup stealing an idea from a poster a couple pages back.

We had a lovely dinner tonight. DH grilled chicken thighs, and delicata squash halves on the grill. I served leftover green beans that were really good. (I bought them fresh at the Farmers' Market) and sliced tomatoes anointed with olive oil and sprinkled with fresh basil.
The delicata was especially good. I coated the de-seeded insides with olive oil, salt and pepper. Lovely flavor.
My planned menu this week seems to be shot to hell, so tonight we are back to having Enchaladas and re-fried beans. I will actually have time today to assemble them. That is what takes so long, but boy are they yummy!!!! We will have a small salad as well. If I have time to run to Walmart I will grab a ripe avocado and make guacamole salad. They have really good and usually ripe avocados. I am not a huge fan of WalMart but some things they do have that I really like.
Tonight tomato,cilantro and cheese omelette served with dill buttered beer bread.To drink lassi or sour lemon water.For dessert one of my childhood favorites.........chocolate soup..........
1 package Dr. Oetker chocolate pudding
1 liter milk
3 egg whites
a bit of sugar to sweeten
Slowly cook pudding mix with the milk and add a bit of sugar.Beat egg whites stiff and gently fold under the chocolate soup. The egg whites are suppose to look like little white mountain peaks when you serve the soup.

The quest to minimize kitchen waste continues, and I have a some beautiful kale from the farmers market chilling in the salad spinner, so I'm thinking this...
Mmmm....everyone's dinners sound so good today. I am just going to use up my roast beef dinner leftovers. I will turn them into open faced hot roast beef sandwiches. I have some incredible cheddar buns I bought at a farm stand that will be great as the base.
