I started a big batch of red sauce today. The husband is in the kitchen making a big batch of meatballs. We will have those tonight over spaghetti. We will freeze the leftovers for easy freezer meals.

It is unseasonably hot & humid in my area today, so tonight's dinner will be slices of fresh mozzarella, tomato, cucumber, and Vidalia onion, on a bed of butter lettuce and arugula, with a balsamic vinaigrette dressing.

I made a sort of Chinese(American) style chicken and veggies (cabbage, mushrooms, onions, celery and carrots) in the crockpot and served it with rice.

Made my first Shrimp Etouffee. It wasn't like what I had at the restaurant a few years ago, but it was pretty good.

The restaurant's version was like beef broth, with Creole and Cajun seasoning. It was really spicy soup, with a rice-ball in the middle.

Mine was thicker, like a stew. It was pretty good, with a good spice toward the end. Not too spicy or my daughter would throw it out.

Left over Pizza. Was not very good, but it filled the spot.

Ok, I think I worked it out.

A bed of seasoned turnip greens, chicken patty, sauteed spiral sweet potato, topped with some tomato, pistachios and balsamic glaze.

Tomorrow night the rest of the turnip greens, with pasta, cajun sausage, and heavy cream.
