English or mini cucumbers thinly sliced
cherry tomatoes or regular thinly sliced tomatoes
yellow Bell pepper thinly sliced
curly parsley
fresh lemon juice
lemon zest
olive oil
white wine vinegar
salt/black pepper to taste
Yesterday turned into petite diced onion/green celery/bacon sautéed with garlic and rosemary, topped by chicken breast marinated in buttermilk and happily swimming in chardonnay. 30 minutes later served on basmati with a green salad.
Today - ribeye, salad, baguette reheated on the grill, pork chop for me.
We'll get back late-ish from riding, so left overs and I pulled out some madras lentils for me.

Another early morning so another early dinner for me! Back in December I splurged on several very small (~2 lbs. each) prime rib roasts when they were on sale ($5.99/lb.). Today I treated myself ... this is becoming a once-a-month thing, which could get expensive even at the sale price ...
I got a bit carried away with the veggies -- that always seems to happen on days when I go grocery shopping!* Today it was carrots, asparagus, onions, zucchini, grape tomatoes, sugar snap peas, and mushrooms ...
The roast was 2.06 pounds so it took about 45 minutes altogether (including "resting time") ... I made it rare again ...
I missed the avocado I usually have with prime rib (the ones I bought today were nowhere near ripe -- I should have thought ahead and bought ONE "soft-ish" one!), but it was still really delicious. (I have about 1-1/2 servings left!) The veggies were great too. YUM!

* When I typed this it reminded me of when I was a kid growing up on Air Force bases ... most kids brought their lunch to school, and it was always really obvious when payday was, because kids' lunches were much more elaborate just after paydays! Instead of just a sandwich a milk, we'd get a sandwich, chips, a piece of fruit, some cookies, AND milk! I have fond memories of my military-brat days.
