What is the one vegetable you use the most in food prep, and why...?

Yams, peas, carrots, greens of all sorts, shallots and green onion too. Lots of fresh herbs! Cilantro, dill, basil, chives, Italian parsley.

I'd rather eat various raw fruits, but for cooked food prep... veggie? Potato.

Fruit? Lemon.

I could easily exist on melons, green grapes & potatoes alone, with the quarterly steak tossed in.

Mushrooms. All types. They are so versatile, amazingly meaty, and delicious.

Onions and tomatoes. Only problem is our garden tommies end fast and ones from store taste like paper. No matter how good a quality they are claimed.
