Eggs seem too much like breakfast, so an egg casserole for dinner was a first. Tried the recipe from Robert Irvine on Food Network and with a couple of substitutions, it was very tasty with a salad. I got a high rating Lol DH really liked it, will make it again for sure.

Cream of Malunggay soup. Malunggay (or Moringa) is, as far as I know, the only large tree whose leaves are eaten as a green vegetable. They grow commonly in the wild and in urban neighborhoods in South Asia.

I served one of those salad kits to go with an awesome roast I made and it had a little package of what I think was toasted quinoa to sprinkle over the greens in the place of croutons- they were so yummy- I had a bunch left over and just ate them plain- delicious, crunchy nutty goodness !!!!

Avocado in my salad. I have tasted it in the past and never cared for it because of the texture. I decided to bite the bullet and add some fresh sliced Avocado to a salad yesterday. It was very good.
